Description

Idiazabal Cheese is a pressed cheese made from unpasteurized sheep milk from the sheep in Spain. The cheese is handmade and covered in a hard, dark brown, inedible rind. While it ages for a few months, it develops a nutty, buttery flavor. If it is aged longer, it becomes firm and sharp and can be used for grating. It is delicious to eat fresh with quince paste and crackers!
